Apple, Pear, Strawberry Spinach Salad with Strawberry Vinaigrette




This salad is everything a salad should be- refreshing, healthy, different, and very tasty. The thing that I dislike most about fruity types of salads is the amount of sugar the salad dressings usually call for. It’s so counterproductive, don’t you think? Salad dressings should be as pure and as natural as possible, while still maintaining a deliciously sweet or spicy flavor! If you share these beliefs then you’ll love this Vinaigrette. It has 2 tablespoons of honey and the rest of the sweetness is from puree strawberries.



I also love the choice of fruits that go in this salad and that none of them have to be peeled. I have a hunch that grapes would be a good complement in this mix too but have not tried it yet.

Apple, Pear, Strawberry Spinach Salad with Strawberry Vinaigrette

Ingredients:
Salad:
1 Apple, skin on, chunky dices
1 Pear, skin on, chunky dices
A Handful of Strawberries, stem removed
Baby spinach leaves (any greens will do), cut to proper salad size pieces
Sunflower Seeds or Pumpkin Seeds

Strawberry Vinaigrette:
1.5 cups strawberries, stems removed
¼ cup water
¼ cup oil
¼ cup red wine vinegar
2 tablespoons honey
A generous sprinkling of poppy seeds

Directions:

1.       Toss salad ingredients together
2.       Puree Strawberry Vinaigrette ingredients, either with an immersion blender, food processor, or blender

3.       Pour dressing over salad right before serving

** Strawberry vinaigrette makes enough for 2 salads. May store in fridge for up to 1 week.
