Cookies ‘n Cream Ice Cream Pie

Nice to chat with you again!

This is a fun food to do a write-up on! This is mainly because it looks and sounds really spectacular (which it is), but it is also a complete joke to make. I remember the day that my sister shared this sacred recipe with me. I remember the relief that surged through my body and the glee. Oh yes, the glee!

This recipe is not found in any cookbook (that I know of, at least), yet many wives and mothers know of this secret concoction. “How? How!,” you may ask. Well, this recipe is generally passed down from mother to daughter, sister to sister, friend to friend. And because we are all friends on this blog, you will now be privy to the recipe that may just change your life.


I love watching people’s reaction when I list the ingredients and steps to the cookies ‘n cream pie.  I just recently told a friend of mine who ate by our house, and she reacted with an evil chuckle! And then she whispered, “No! Really?”.




I will leave you in suspense no longer! The ingredients to this pie are 1 graham cracker crust, 2 riches whips, and 15-18 chocolate and/or vanilla sandwich cookies, broken into pieces.

Pour the defrosted whips in the crust. Break your cookies up and add them to the whip evenly throughout the crust. Decorate with Cookie Halves on top (optional, but it does add a nice touch). Freeze for 14 hours before serving. Viola! Hope that was not too troubling for you!

I actually got the idea to decorate the pie with cookies on top from my neighbor Sarah W. 

Before I wrap up, I would just like to share one funny story that happened with my friend, Ella and this pie! One Shabbos my good friend Ella ate by our house for lunch. I served the cookies ‘n cream pie for dessert, and after completing her slice, she was full of compliments. “Rechy, this is such a delicious dessert. I am very impressed!” I responded by telling her the secret recipe. I personally have a difficult time holding these things back! Her expression almost immediately changed from happy to horrified! “What?!? Rechy?! I cannot believe I just ate all those chemicals!”
In my defense, dessert is supposed to be sweet, rich, chocolaty…not healthy! I mean at least it did not have raw eggs or even artery clogging, margarine or corn syrup! Anyways, let’s fast-forward 3 years later. Ella’s hair is now systematically covered by a colorful kerchief (AKA: She’s married!); she is in middle of mid-terms in graduate school; and her new sister in-law asked if she could make the dessert for the 30 guests at the family Purim seudah (meal for the holiday that falls out around March). Ella was recapping to me all her stress of how she literally just got married, was thrown into mid-terms, and NOW HAS TO MAKE DESSERT FOR 30 PEOPLE!!! We both knew that she was not going to tell her new sister in-law “no”. I asked her what she was going to do about the dessert. Ella responded that she was just going to make that “riches whip and cookie” recipe. I was baffled! “What?!?!? I thought that recipe was “full of chemicals”?". Ella then responded with a nervous laugh and said, “Actually, I make it all the time!!".
Dear, dear, Ella!! I guess the lesson learned from this tale is that you may need to be on “overload” to appreciate this recipe! Maybe just share it with your friends that are over-worked and need a break! Then of course there is the option of not sharing it with anybody! It’s all up to you!

Cookies ‘n Cream Ice Cream Pie
Prep Time: 10 minutes
Freeze Time: 14 hours
Yields: 8 servings

Ingredients:
2 riches whips, defrosted
15-18 sandwich cookies (chocolate or vanilla), broken into pieces
1 graham cracker crust

Instructions:
1.       Pour both riches whips into the crust.
2.       Add cookie pieces to whip. Gently mix. If you would like, you could decorate the top of the pie with cookie halves, by placing the cookie half gently on top of the whip.
3.       Put in Freezer for 14 hours before serving.

4.       Let sit outside freezer for around 5 minutes for easier slicing.
